A little Pumpkin for your Pumpkin!

Many times, I find myself looking for accomplishments, any small victory, when it seems things are difficult here in the parenthood. Like with Leah, I'd have a bad potty training day or more recently a moment of "ugliness" and I could say to myself . . ."well at least she's a good eater!" And that is true. I have no trouble filling my girl with fruits & veggies and she understands what it means to finish all of her supper before she's allowed a treat of some kind.

But Preston, on the other hand is not so eager to eat . . . much of anything. he's a picker and at times will shovel food in two fisted and other meals he refuses everything . . . especially these . . .

But I recently read an article about pumpkin- and what an Amazing source of vitamins it is . . . just read the can for proof: fiber, iron, vitamin C & Vitamin A- 280% your daily allowance of that one! So you'd think that would justify an extra slice of Pumpkin pie or pumpkin bread . . . but I know how much SUGAR goes into those recipes- I've made them before. But Prestons' Kindermusik teacher, Ms Christy, gave us all a sample and a recipe of a fantastic little cookie treat with VERY little sugar content and all of the goodness of pumpkin! SO try these out for a change and slip a little nutrition into your picky eaters. Add raisins or nuts for extra fiber & protein and use less of the mini morsels if you do that! I don't thin you can mess these up . . . enjoy!

Pumpkin Cookies
1 box spice cake
1 15 oz can pumpkin
1/2 bag mini chocolate chips (or a small amount of chopped nuts/raisins)
Just mix these 3 ingredients together (don't follow cake directions on box). Spoon onto cookie sheet (lightly greased) and cook for 10-14 minutes on 350.

Ahhhhhhhhh, my work here is done!
